Now, let's get down to the meat of the matter...

Turkey

  • Preheat your Oakford to 225 degrees Fahrenheit.
  • Season the turkey with salt, pepper, and your favorite herbs and spices.
  • Smoke the turkey for 3-4 hours, or until the internal temperature reaches 165 degrees Fahrenheit. The ample 1400 sq. in. total cooking space of the Oakford 1400 will comfortably accommodate even the bigger birds.
  • For turkey, we recommend using apple or cherry wood pellets for a sweet, fruity smoke that complements the poultry perfectly.
  • Let the turkey rest for 15 minutes before carving.

Chicken

  • Preheat your Oakford to 225 degrees Fahrenheit.
  • Season the chicken with salt, pepper, and your favorite herbs and spices.

  • Smoke the lamb for 4-6 hours, or until the internal temperature reaches 145 degrees Fahrenheit.
  • For lamb, we recommend using mesquite wood pellets for a rich, full-bodied smoke flavor.

  • Smoke the beef for 3-5 hours, or until the internal temperature reaches 125 degrees Fahrenheit for rare, 135 degrees Fahrenheit for medium rare, and 145 degrees Fahrenheit for medium. The Oakford 1150's adjustable chimney and intake dampers are ideal for regulating heat and smoke.
  • For beef, try using oak or mesquite wood pellets for a robust, earthy smoke flavor.
  • Let the beef rest for 10 minutes before carving.

Fish

  • Preheat your Oakford to 225 degrees Fahrenheit.
  • Season the fish with salt, pepper, and your favorite herbs and spices.

Ribs
